Actually Chris I am writing a dissertation with an implicit purpose to
look into educational possibilities derived from D&G. 
very little work exists yet in this regard. especially if you want tp
stress rhisomorphic approach. recently the book came out "Naming the
multiple: pststructuralism and education" with the chapter on Deleuze by
Mary Leach and Megan Bolen. It's more like applying Deleuze to teaching a
subject than educational theory and philosophy (that i am interested in)
but you might find it helpful. I bought it through amazon.
